Adorable Acorn Squash Recipe

As you may know from reading this blog, I love recipes that allow me to interchange the ingredients for whatever I have on hand.

This recipe is yet another one of those gems ;)

The only thing you NEED is an acorn squash, you decide the rest!

You can add any peppers, spinach, tomatoes, zucchini, quinoa, WHATEVER.  And I promise, it will taste amazing.

Here's what I used this time, but trust me, I'll be changing it up every now and then :)

Adorable Acorn Squash Recipe: (serves 1, plus leftovers)


1 acorn squash, cut in half
1 zucchini
1/2 pound of ground turkey
1 cup of spinach
1 tomato
1 yellow pepper
1 tsp. southwest seasoning (see image below for recipe)
handful of cilantro (optional, for garnish)


1. Pre-heat oven to 400 degrees
2. Cut Acorn Squash in half, and clean out the inside of any seeds. (If using the bottom half of the squash, be sure to cut the 'nub' off, so it sits flat)
3. Dice up all of your veggies
4. Once the oven is preheated place one half of the squash in the oven for 20 minutes
5. while the squash is in the oven, brown your meat, adding the southwest seasoning
6. In a large skillet, add all of your veggies, and cook until tender
7. Once the squash is done, remove the soft inside with a fork leaving you a 'bowl'.
8. Place all ingredients in the bowl, garnish with cilantro and enjoy!

Use the leftovers to make the next half for another meal!
