Candice & Calabrese Day 15: Portabello Mushroom & Goat Cheese Omelet

Had I browned this omelet anymore it would have been my first 'Fixate Fail', ha.  My omelets have always been a bit of work in progress, but,  despite the extra browning on the outside, this actually was really tasty.

I loved the simplicity of this recipe,  and,  as with any omelet, it's a great reminder that if you've got two eggs and some veggies that you want to be sure you use up, this is a great way to do that.
