Peanut Butter Cups: Shakeology Style

I have been wanting to make these for a while now, and with my freezer meal extravaganza that I've been embarking on, I figured I would take these on as well.

So, these are VERY simple, and take about 10 minutes to make, and then you pop them in the freezer.  Here's the info: 

This makes: 6 peanut butter cups


2 scoops of Shakeology (chocolate or vegan chocolate)
about six 1/2 teaspoons of organic peanut butter (be sure that it's JUST peanut butter with no sugar added, the brand that I used was Santa Cruz)
4 Tbsp. coconut oil


1. Line a muffin tin with 6 paper muffin liners
2. Heat up the coconut oil until totally melted (about 30 seconds in the microwave)
3. Mix the 2 scoops of shakeology with the coconut oil until completely blended together and there is no powder residue.
4. Using a small spoon, drop a small dollup of the shakeology mixture in each muffin liner
5. Then put about a 1/2 teaspoon of peanut butter in each muffin liner, on top of the shakeology that you already placed at the bottom.
6. Dollup another small amount of Shakeology so that the peanut butter is completely covered.
7. Freeze for about 30-40 minutes

If you want to use only one scoop of Shakeology, you can always just put the peanut butter on the bottom, skipping that bottom later of Shakeo.  Totally up to you, just be sure to also cut the coconut oil down to 2 Tbsp. as well.
